Chicken Mango Naga Recipe Ingredients
500g chicken breast, diced
1 onion, chopped
4 cloves garlic, minced
1 tsp cumin
1 tsp paprika
Salt, to taste
1 small mango, peeled and chopped
2 tbsp honey
1/2 cup spring onions, chopped
Fresh coriander, to garnish
Naga chilli sauce (adjust to your spice preference)
Cooking spray oil
Juice of 1 lime

Method:

1. Marinate the Chicken

The first step is to marinate your chicken breast. Combine the juice of one lime, minced garlic, paprika, cumin, and a pinch of salt. Coat the chicken pieces well in this marinade and let them sit for at least 20 minutes (the longer, the better) to allow the flavours to fully develop.

2. Make the Mango Sauce

While your chicken is marinating, it’s time to make the mango naga sauce. In a blender or food processor, blend together the chopped mango, honey, spring onions, fresh coriander, lime juice, and a dash of naga chilli sauce. The naga brings a lovely spicy kick, but adjust the amount to suit your spice tolerance. Blend until smooth.

3. Cook the Chicken

Heat a large frying pan over medium heat and spray with a little cooking oil. Sauté the chopped onion until it becomes translucent. Then, add your marinated chicken pieces and cook until they’re lightly browned and cooked through, about 6–8 minutes.

4. Caramelise the Mango Sauce

5. Finish the Dish

Once the sauce is beautifully caramelised, add the chicken back into the pan. Stir to coat the chicken in the sauce, allowing the flavours to infuse for a few more minutes. When the sauce clings nicely to the chicken, remove from heat.

6. Serve and Garnish

Serve the chicken with 130g of rice and a side of steamed or sautéed green beans. Garnish with a handful of fresh coriander for that finishing touch.
